This box started with a jar I found in the back of a grocery store in Kyoto — the owner had three left from a small-town brewery 200 kilometres away. I bought them all and spent the next six months working backward from that miso to a box that asks the same question it asked: what happens when you wait long enough? Every item here comes from a producer who made a deliberate choice to let time do most of the work.

Aged two winters in a cedar cask, then glass-jarred by hand. The shiso gives it a colour you want to stare at before you stir it in. I found the last three jars in a small grocery in the Higashiyama district. Use it on anything you'd normally put butter on — then wonder why you ever put butter on it.

Six-week lacto ferment, single-variety serrano, nothing added but salt. No vinegar, no sugar. The heat takes about eight seconds to arrive and stays politely. I've been putting this on soft-boiled eggs every morning for three months.

Pressed from three heritage apple varieties grown above 900 metres, fermented raw with wild yeast from the orchard, then aged 18 months in oak. I have been dressing salads with this and nothing else. It does not need help.

Three-year salt-cured ume, sun-dried over two summers, then blended with raw honey from hives kept in the same plum orchard. The brininess and sweetness settle into each other over the cure. Stir a small amount into a bowl of congee and consider why you ever needed anything else.
